Heirloom

Made with American Heirloom and Bittersweet Cider Apples. Aged for 10 months on medium toasted French oak. Baldwin, first planted in 1740, brings crisp grapefruit, pear from the Greening (1650), a lovely soft acidity and hint of stone fruit from the Northern Spy (1790), delicate tannins coming from the Bittersweets, and the oak imparting subtle vanilla notes. It's our most Chapagne-inspired cider.
